- Ingredients:
- 8oz / 200g Self Raising flour
- 2oz butter or margarine
- 3oz caster sugar (plus some for decoration)
- 1 medium egg (beaten)
- 1/2 teaspoon salt
- Jam (of your choice)

Rich Jam Cake Recipe

This traditional recipe is based on a rich buttery biscuit recipe, sandwiched together with a layer of jam. It’s been a favourite in our family for years and never seems to last very long!
- Sift flour and salt into a mixing bowl
- Rub in margarine/ butter and stir in sugar
- Add beaten egg and bring it together until it forms a ball (add a little milk if necessary)
- Divide into 2 and roll out into two 9″ rounds or whatever shape you prefer (I cut round a plate to make 9″ circles)
- Place one of the rounds onto a lightly greased baking sheet and cover with plenty of jam
- Place the other round on top and nip the two pieces together so the jam won’t escape
- Bake at 180°C/ 360°F/ Gas Mark 4 for approx 15 – 20 minutes or until golden brown
- When cool sprinkle with caster sugar and cut into triangles

My husband has been pestering me to make him a jam slice just like his mum used to but I didn’t have a recipe. Did a search and found this one, gave it a go and I won’t be searching any further. Its simple enough to follow and tastes divine – my husband didn’t recommend any improvements!
