• Ingredients:
  • 8oz / 200g Self Raising flour
  • 2oz butter or margarine
  • 3oz caster sugar (plus some for decoration)
  • 1 medium egg (beaten)
  • 1/2 teaspoon salt
  • Jam (of your choice)

Rich Jam Cake Recipe

This traditional recipe is based on a rich buttery biscuit recipe, sandwiched together with a layer of jam. It’s been a favourite in our family for years and never seems to last very long!

  • Sift flour and salt into a mixing bowl
  • Rub in margarine/ butter and stir in sugar
  • Add beaten egg and bring it together until it forms a ball (add a little milk if necessary)
  • Divide into 2 and roll out into two 9″ rounds or whatever shape you prefer (I cut round a plate to make 9″ circles)
  • Place one of the rounds onto a lightly greased baking sheet and cover with plenty of jam
  • Place the other round on top and nip the two pieces together so the jam won’t escape
  • Bake at 180°C/ 360°F/ Gas Mark 4 for approx 15 – 20 minutes or until golden brown
  • When cool sprinkle with caster sugar and cut into triangles
