Strawberry Meringue

Otherwise known as Pavlova, this meringue recipe is really easy and uses only egg whites and sugar (plus your choice of fruit eg, strawberries, raspberries, fruits of the forest, peaches etc)

  • Pre-heat your oven to gas mark 1 / 140°C / 275°F
  • Line a large baking tray with silicone paper (I’ve used greaseproof paper before but this tends to stick, the silicone paper works far better)
  • Measure out your sugar and place to one side
  • Place the egg whites in a large dry bowl  and whisk until they form soft peaks ie. you can turn the bowl upside down and they won’t slide out – don’t over whisk though or the eggs will start to collapse
  • Add the sugar approx a tablespoon at a time whisking after each addition
  • Using a metal spoon, spoon the mixture onto the baking tray – forming a circle about 8 inches (20cm)
  • Place in the oven and cook for 1 hour
  • Turn the oven off but leave the meringue / pavlova in the oven to cool completely (or if you’re making it in the evening,  leave it overnight in the oven)
  • Lift meringue off the baking sheet and place on your serving plate
  • Just before you’re about to serve it decorate with whipped cream and sliced strawberries
  • Sprinkle with sifted icing sugar (if desired)

Comments: This meringue recipe is really versatile and can be topped with any soft fruit of your choice. If you want to make individual merinuges, use the same recipe but spoon dessertspoons of the meringue mixture onto the baking sheet (shape between two spoons). Cook for exactly the same time as above. When cool sandwich the meringues together with whipped cream.
