  • Dry mix:
  • 1/2 cup all purpose flour
  • 1/2 cup wheat flour
  • 1 tsp cornflour
  • 1tsp salt
  • 2 tsp cocoa (good quality)
  • 1/2 tsp baking pwd
  • Wet mix (All at room temperature)
  • 1 tsp vanilla
  • 1/3 cup yogurt
  • 1/3 cup oil
  • 1/3 cup brown sugar
  • 2 tsp white sugar
  • a little milk as required

Method

  • Preheat oven to 180°C / 360°C / Gas Mark 4
  • Start by whisking together yogurt,oil, sugars and vanilla
  • In another bowl sieve the dry mix 2 times
  • Mix in the wet batter little at a time folding it in,then finally add in a splash of milk
  • If you pick up a spoonful, it should drop off the spoon in a goop while you count 1-2-3. If it takes longer than add a little more milk… now its ready to go in the loaf tin
  • Spray with non stick spray (or grease well) and pour in the batter..tap 2/3 times and bake at 180°C/ 350°F/ Gas Mark 4 for 25/30 min

  • Do not open the oven until 20 min has passed. I promise you your loaf will be perfect so be patient and check only after 20 min ! Serve with ice cream or whipped cream !
